Simple Soto Ayam Recipe


 

Soto Ayam is a flavorful Indonesian chicken soup that's both comforting and delicious. Here's a simplified recipe for you:

Ingredients:

  • 500g chicken pieces (you can use bone-in, skin-on chicken thighs for more flavor)
  • 1 liter chicken broth or water
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 2-inch piece of fresh ginger, smashed
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 tablespoons vegetable oil
  • 200g rice vermicelli noodles, cooked according to package instructions
  • 2 hard-boiled eggs, halved
  • Fried shallots for garnish (optional)
  • Chopped green onions for garnish
  • Lime wedges for serving
  • Salt and pepper to taste

Spice Paste (Bumbu):

  • 3 shallots
  • 3 cloves garlic
  • 1-inch piece of ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground white pepper
  • 2 candlenuts (or substitute with macadamia nuts or cashews)
  • 1 tablespoon vegetable oil

Instructions:

  1. Prepare the spice paste (bumbu) by blending all the spice paste ingredients in a food processor until smooth.

  2. Heat vegetable oil in a large pot over medium heat. Add the minced garlic, chopped onion, and the spice paste. Cook until fragrant, about 3-4 minutes.

  3. Add the chicken pieces to the pot and cook until they are browned on all sides.

  4. Pour in the chicken broth or water, then add lemongrass, kaffir lime leaves, bay leaves, smashed ginger, and season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer until the chicken is cooked through, about 20-25 minutes.

  5. Once the chicken is cooked, remove it from the pot and shred the meat using two forks. Return the shredded chicken to the pot.

  6. To serve, place some cooked rice vermicelli noodles in a bowl. Ladle the hot soup over the noodles. Top with a halved hard-boiled egg, fried shallots (if using), and chopped green onions. Serve with lime wedges on the side.
