Telor Base Genep
Telor Base Genep is a traditional Balinese dish featuring eggs cooked in a flavorful spice mixture. Here's a recipe for Telor Base Genep:
Ingredients:
- 6 hard-boiled eggs, peeled
- 5 shallots, peeled and finely chopped
- 4 cloves garlic, peeled and finely chopped
- 2 red chili peppers, finely chopped (adjust according to your spice preference)
- 2 green chili peppers, finely chopped
- 2 tomatoes, finely chopped
- 2 teaspoons shrimp paste (terasi), toasted
- 2 teaspoons tamarind paste
- 2 teaspoons palm sugar or brown sugar
- 1 teaspoon salt
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground black pepper
- 1 stalk lemongrass, white part only, bruised
- 2 kaffir lime leaves, torn
- 1 cup water
- Oil for sautéing
Instructions:
Heat some oil in a pan over medium heat. Add the chopped shallots and garlic, and sauté until fragrant and golden brown.
Add the chopped red and green chili peppers to the pan, and continue to sauté for another 2-3 minutes.
Stir in the chopped tomatoes and cook until they break down and release their juices.
In a mortar and pestle or food processor, grind together the toasted shrimp paste, tamarind paste, palm sugar, salt, ground turmeric, ground coriander, ground cumin, and ground black pepper until you have a smooth paste.
Add the spice paste to the pan with the cooked vegetables, and mix well to combine.
Add the bruised lemongrass stalk and torn kaffir lime leaves to the pan, along with the water. Stir to combine.
Gently add the hard-boiled eggs to the pan, making sure they are submerged in the sauce.
Reduce the heat to low, cover the pan, and let the eggs simmer in the sauce for about 15-20 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
Once the eggs are heated through and infused with the flavors of the sauce, remove the pan from the heat.
Serve the Telor Base Genep hot with steamed rice or as part of a Balinese meal.
