Balinese Bebek Betutu (Betutu Duck)
Bebek Betutu is a traditional Balinese dish consisting of duck that's seasoned and wrapped in banana leaves before being slow-cooked. Here's a recipe for Bebek Betutu:
Ingredients:
- 1 whole duck, cleaned and chopped into serving pieces
- Banana leaves for wrapping
- 10 shallots, peeled and chopped
- 5 cloves garlic, peeled and chopped
- 5 red chili peppers, chopped (adjust according to your spice preference)
- 5 candlenuts (or macadamia nuts), chopped
- 2 stalks lemongrass, white part only, chopped
- 2 thumbsized pieces of galangal, chopped
- 3 thumbsized pieces of ginger, chopped
- 3 thumbsized pieces of turmeric, chopped (or 2 tablespoons turmeric powder)
- 2 tablespoons shrimp paste (terasi)
- 1 tablespoon tamarind paste
- 2 teaspoons ground coriander
- 1 teaspoon ground black pepper
- 1 teaspoon ground white pepper
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 4 kaffir lime leaves, thinly sliced
- Salt to taste
- Banana leaves for wrapping
- Cooking twine or toothpicks
Instructions:
Preheat your oven to 160°C (320°F).
In a food processor or blender, combine shallots, garlic, chili peppers, candlenuts, lemongrass, galangal, ginger, turmeric, shrimp paste, tamarind paste, ground coriander, black pepper, white pepper, nutmeg, cloves, and cinnamon. Blend until you have a smooth paste. You may need to add a little water to facilitate blending.
Rub the duck pieces with salt and then coat them thoroughly with the spice paste.
Take a large piece of banana leaf and place a portion of the spice-coated duck on it. Sprinkle some sliced kaffir lime leaves on top. Wrap the banana leaf tightly around the duck and secure with cooking twine or toothpicks. Repeat this process for each duck piece.
Place the wrapped duck pieces in a baking dish or on a baking tray and bake in the preheated oven for about 3-4 hours, or until the duck is tender and cooked through. You can periodically baste the duck with its own juices to keep it moist.
Once the duck is cooked, remove it from the oven and let it rest for a few minutes before unwrapping and serving.
Serve your Bebek Betutu with steamed rice and traditional Balinese accompaniments like sambal matah (raw chili sambal) and lawar (mixed vegetables with grated coconut and spices).
