Simple Recipe for Satay Chicken

Ingredients:

  • 500g boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes (if using)

For the marinade:

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric

For the peanut sauce:

  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha sauce (adjust to taste)
  • Water (as needed to adjust consistency)

Instructions:

  1. In a bowl, mix together all the marinade ingredients until well combined. Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

  2. If using wooden skewers, preheat your grill or grill pan to medium-high heat. Thread the marinated chicken onto the skewers.

  3. Brush the grill or grill pan with vegetable oil to prevent sticking. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Make sure to turn them occasionally for even cooking.

  4. While the chicken is cooking, prepare the peanut sauce. In a small saucepan, combine all the peanut sauce ingredients over medium heat. Stir continuously until the peanut butter is melted and the sauce is smooth. If the sauce is too thick, you can thin it out with a little water until you reach your desired consistency.

  5. Once the chicken skewers are cooked, remove them from the grill and serve hot with the peanut sauce for dipping. You can also serve them over rice or with a side of salad for a complete meal.
