Sayur Urab (Balinese Mixed Vegetables)
Sayur Urab is a traditional Balinese dish featuring mixed vegetables tossed in a flavorful coconut dressing. Here's a recipe to make Sayur Urab:
Ingredients:
For the vegetables:
- 200g green beans, trimmed and cut into bite-sized pieces
- 200g bean sprouts, rinsed
- 200g spinach or kangkung, washed and roughly chopped
- 1 carrot, julienned or grated
- 1 cup grated fresh coconut (or desiccated coconut, toasted)
- 2 kaffir lime leaves, finely sliced
- 1 lemongrass stalk, white part only, bruised and thinly sliced
- Salt, to taste
For the dressing:
- 1 cup grated fresh coconut (or desiccated coconut, toasted)
- 2 red chili peppers, seeded and chopped
- 2 cloves garlic, chopped
- 2 shallots, chopped
- 1 teaspoon shrimp paste (terasi), toasted (optional)
- 1 tablespoon palm sugar (or brown sugar)
- 2 tablespoons tamarind juice (from soaking tamarind pulp in water)
- Salt, to taste
Instructions:
Start by preparing the vegetables. Blanch the green beans, bean sprouts, and spinach separately in boiling water until tender-crisp. Drain and set aside.
In a large mixing bowl, combine the blanched vegetables with the grated coconut, sliced kaffir lime leaves, sliced lemongrass, and salt. Toss gently to mix well. Set aside.
Next, prepare the dressing. In a mortar and pestle or food processor, combine the chopped red chili peppers, garlic, shallots, toasted shrimp paste (if using), and palm sugar. Grind or process into a smooth paste.
Transfer the paste to a small saucepan. Add the grated coconut and tamarind juice to the saucepan. Cook over low heat, stirring constantly, for about 3-5 minutes, or until the coconut is heated through and the flavors are well combined. Season with salt to taste.
Once the dressing is ready, pour it over the mixed vegetables in the bowl. Toss gently to coat the vegetables evenly with the dressing.
Taste and adjust the seasoning if needed, adding more salt or tamarind juice according to your preference.
Transfer the Sayur Urab to a serving dish and serve at room temperature as a side dish or part of a larger Balinese meal.
