Sate Lilit Ayam


 

Sate Lilit is a Balinese-style satay where minced meat or fish is mixed with a variety of aromatic herbs and spices, then wrapped around bamboo sticks or lemongrass stalks before grilling. Here's a basic recipe for making Sate Lilit:

Ingredients:

  • 500g minced chicken, pork, or fish (traditionally tuna or mackerel)
  • 2 tablespoons grated coconut, toasted
  • 2 tablespoons coconut milk
  • 2 tablespoons coconut cream
  • 2 kaffir lime leaves, finely chopped
  • 2 stalks lemongrass, white part only, finely chopped
  • 3 cloves garlic, minced
  • 3 shallots, minced
  • 2 red chili peppers, minced (adjust to taste)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon palm sugar or brown sugar
  • 1 teaspoon salt, or to taste
  • Bamboo skewers or lemongrass stalks, for skewering
  • Banana leaves or aluminum foil, for wrapping (optional)

Instructions:

  1. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning during grilling. If using lemongrass stalks, trim off the ends and remove the tough outer layers, then cut them into skewer-sized pieces.
  2. In a large bowl, combine the minced meat or fish with grated coconut, coconut milk, coconut cream, kaffir lime leaves, lemongrass, garlic, shallots, red chili peppers, ground turmeric, ground coriander, shrimp paste, palm sugar, and salt. Mix well until everything is evenly combined.
  3. Take a portion of the mixture and wrap it around the bamboo skewers or lemongrass stalks, forming a cylindrical shape. Press the mixture firmly to ensure it sticks to the skewer.
  4. If desired, wrap the meat mixture around the skewers with banana leaves or aluminum foil to help hold the shape and add flavor during grilling.
  5. Preheat your grill or barbecue to medium-high heat.
  6. Grill the Sate Lilit skewers for about 5-7 minutes on each side, or until the meat is cooked through and slightly charred on the outside. Make sure to rotate the skewers occasionally for even cooking.
  7. Once cooked, remove the Sate Lilit from the grill and serve hot with steamed rice and your favorite dipping sauce or sambal.
