Sambal Matah Balinese Recipe


 

Sambal Matah is a delightful Balinese condiment known for its fresh and vibrant flavors. Here's a traditional recipe to make Balinese Sambal Matah:

Ingredients:

  • 5-6 shallots, thinly sliced
  • 3-4 red chili peppers (adjust according to your spice preference), thinly sliced
  • 2-3 bird's eye chili peppers (optional), thinly sliced
  • 2-3 kaffir lime leaves, thinly sliced
  • 2-3 tablespoons fresh lime juice
  • 1 tablespoon coconut oil (or vegetable oil)
  • 1 teaspoon palm sugar (or brown sugar), grated or finely chopped
  • 1 teaspoon shrimp paste (terasi), toasted (optional)
  • Salt to taste

Instructions:

  1. Start by preparing all the ingredients. Thinly slice the shallots, red chili peppers, bird's eye chili peppers, and kaffir lime leaves. If using shrimp paste, toast it in a dry skillet over low heat until fragrant, then set aside to cool.

  2. In a mixing bowl, combine the sliced shallots, red chili peppers, bird's eye chili peppers (if using), and kaffir lime leaves.

  3. Add the freshly squeezed lime juice, coconut oil, grated palm sugar, and toasted shrimp paste (if using) to the bowl.

  4. Season with salt to taste and gently toss all the ingredients together until well combined.

  5. Let the Sambal Matah sit for about 10-15 minutes to allow the flavors to meld together.

  6. Taste and adjust the seasoning if needed, adding more salt or lime juice according to your preference.

  7. Transfer the Sambal Matah to a serving dish and serve immediately as a condiment or topping for grilled meats, fish, or vegetables. It can also be enjoyed with rice or as a flavorful accompaniment to Indonesian dishes.

  8. Store any leftovers in an airtight container in the refrigerator for up to 2-3 days. However, Sambal Matah is best enjoyed fresh.
