Rujak Bulung Boni (Balinese salad featuring seaweed)
Rujak Rumput Laut is a refreshing Indonesian salad featuring seaweed as the main ingredient, combined with a tangy and spicy dressing. Here's a recipe to make it:
Ingredients:
For the salad:
- 200g fresh seaweed (such as green seaweed or wakame), soaked in cold water until rehydrated
- 1 cucumber, thinly sliced
- 1 small pineapple, peeled and cut into bite-sized pieces
- 1 green apple, thinly sliced
- 1 firm mango, peeled and cut into bite-sized pieces
- 1 small jicama, peeled and cut into thin strips
- 1 small red onion, thinly sliced
- 1 red chili pepper, thinly sliced (optional, adjust to taste)
- 1 tablespoon toasted sesame seeds, for garnish
- 1 tablespoon fried shallots, for garnish (optional)
For the dressing:
- 3 tablespoons tamarind paste
- 2 tablespoons palm sugar (or brown sugar)
- 1 teaspoon salt
- 1 teaspoon shrimp paste (terasi), toasted (optional)
- 2 cloves garlic, minced
- 2 red chili peppers, minced (adjust to taste)
- Juice of 1 lime
- 2 tablespoons water
Instructions:
Prepare the rehydrated seaweed by draining it well and squeezing out excess water. If using larger pieces of seaweed, you can chop them into smaller, more manageable pieces.
In a large mixing bowl, combine the rehydrated seaweed with the sliced cucumber, pineapple, green apple, mango, jicama, red onion, and red chili pepper (if using). Toss gently to mix well.
In a small bowl, prepare the dressing by mixing together the tamarind paste, palm sugar, salt, toasted shrimp paste (if using), minced garlic, minced red chili peppers, lime juice, and water. Stir until the sugar is dissolved and the ingredients are well combined.
Pour the dressing over the salad mixture in the large bowl. Toss gently to coat the salad ingredients evenly with the dressing.
Transfer the Rujak Rumput Laut to a serving platter or individual plates.
Garnish the salad with toasted sesame seeds and fried shallots (if using).
Serve immediately as a refreshing appetizer or side dish.
Adjust the spiciness of the dressing by adding more or fewer chili peppers according to your preference.
