NASI JINGGO

Ingredients:

  • Sliced cucumber and tomato
  • Fried peanuts or anchovies
  • Fried shallots or onions
  • Any other desired side dishes or condiments

For Serving:

  • Banana leaves, washed and cut into squares
  • Toothpicks or small bamboo skewers

Instructions:

  1. Cook the Rice:

    • In a rice cooker or pot, combine the rinsed jasmine rice, coconut milk, water, pandan leaves (if using), and salt.
    • Cook the rice according to your rice cooker's instructions or on the stovetop until it's fluffy and fully cooked.
  2. Prepare the Side Dishes:

    • Prepare your chosen side dishes. This can include frying chicken, tofu, or tempeh, making sambal sauces, slicing cucumber and tomato, and frying peanuts or anchovies.
  3. Assemble the Nasi Jinggo:

    • Place a small portion of rice in the center of a banana leaf square.
    • Arrange a variety of side dishes on top of the rice.
    • Wrap the banana leaf around the rice and side dishes to form a small packet. Secure the packet with toothpicks or small bamboo skewers.
  4. Serve:

    • Serve the Nasi Jinggo packets while still warm.
    • To eat, unwrap the banana leaf packet and enjoy the rice and side dishes together.
