Loloh Kayu Manis - Balinese herbal drink made with cinnamon
Loloh Kayu Manis is a traditional Balinese herbal drink made with cinnamon and other herbs believed to have health benefits. Here's a recipe to make Loloh Kayu Manis:
Ingredients:
- 2-3 sticks of cinnamon (preferably Ceylon cinnamon)
- 4 cups water
- 4-6 pandan leaves, tied into knots
- 2-3 kaffir lime leaves
- 2-3 lemongrass stalks, bruised
- 4-6 cloves
- 1 thumb-sized piece of ginger, thinly sliced
- 1 tablespoon palm sugar or brown sugar (optional, adjust to taste)
- Honey or sweetener of your choice (optional, adjust to taste)
Instructions:
In a pot, combine the cinnamon sticks, pandan leaves, kaffir lime leaves, lemongrass stalks, cloves, and ginger.
Add 4 cups of water to the pot and bring the mixture to a boil over medium heat.
Once boiling, reduce the heat to low and let the mixture simmer gently for about 15-20 minutes to allow the flavors to infuse.
After simmering, remove the pot from the heat and let the mixture cool slightly.
Strain the mixture through a fine mesh sieve or cheesecloth to remove the herbs and spices. Press down on the herbs and spices to extract as much liquid as possible.
Add palm sugar or brown sugar to the strained liquid, if using, and stir until dissolved. You can also add honey or another sweetener of your choice if desired.
Let the Loloh Kayu Manis cool to room temperature, then transfer it to a pitcher or serving jug.
Refrigerate the Loloh Kayu Manis until chilled.
Serve the chilled Loloh Kayu Manis in glasses with ice cubes, if desired.
