Jukut Ares - Balinese Banana Stems
Jukut Ares is a Balinese dish made from banana stems cooked in a flavorful broth. Here's a recipe for Jukut Ares:
Ingredients:
- 1 banana stem, peeled and thinly sliced
- 2 cups coconut milk
- 4 cups water
- 2 bay leaves
- 2 kaffir lime leaves
- 1 lemongrass stalk, bruised
- 3 cloves garlic, minced
- 3 shallots, minced
- 2 thumbsized pieces of galangal, thinly sliced
- 2 thumbsized pieces of ginger, thinly sliced
- 2 red chili peppers, sliced (adjust according to your spice preference)
- 1 teaspoon shrimp paste (terasi), toasted
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon palm sugar or brown sugar
- Salt to taste
- Oil for sautéing
Instructions:
Heat some oil in a large pot over medium heat. Add the minced garlic and shallots, sliced galangal and ginger, and sliced chili peppers. Sauté until fragrant, about 2-3 minutes.
Add the toasted shrimp paste to the pot and continue to sauté for another minute.
Stir in the ground turmeric and coriander, and cook for another minute to toast the spices.
Pour the water and coconut milk into the pot, and add the bay leaves, kaffir lime leaves, and bruised lemongrass stalk. Bring the mixture to a gentle simmer.
Add the thinly sliced banana stem to the pot, stirring to combine with the broth.
Let the Jukut Ares simmer gently for about 30-40 minutes, or until the banana stem is tender and the flavors have melded together.
Once the banana stem is cooked through, season the Jukut Ares with palm sugar and salt to taste. Adjust the seasoning if necessary.
Serve the Jukut Ares hot as a side dish or part of a Balinese meal, alongside steamed rice and other dishes.
