Es Cendol
Cendol is a popular Southeast Asian dessert, particularly in Indonesia, Malaysia, and Thailand. It's made with pandan-flavored rice flour jelly served with coconut milk and palm sugar syrup. Here's a recipe to make Cendol at home:
Ingredients:
For the Cendol (Pandan Jelly):
- 100g rice flour
- 2 tablespoons tapioca starch
- 1/4 teaspoon salt
- 200ml pandan juice (made by blending pandan leaves with water and straining)
- Green food coloring (optional)
For the Palm Sugar Syrup:
- 100g palm sugar (gula melaka or gula jawa), grated or chopped
- 100ml water
For Serving:
- 200ml coconut milk
- Ice cubes
Instructions:
To make the Cendol (Pandan Jelly), mix the rice flour, tapioca starch, and salt in a bowl. Gradually add the pandan juice while stirring until you have a smooth batter. You can add a few drops of green food coloring to enhance the color if desired.
Prepare a pot of boiling water. Place a cendol mold (a perforated ladle or a large-holed colander) over the pot, ensuring that the bottom of the mold is submerged in the boiling water.
Pour some of the batter into the cendol mold and press it through the holes using a spatula or the back of a spoon. Allow the pandan jelly to cook in the boiling water for about 1-2 minutes or until it becomes translucent and cooked through.
Once the pandan jelly is cooked, immediately transfer it to a bowl of cold water to cool. Repeat the process until all the batter is used up.
For the palm sugar syrup, combine the grated or chopped palm sugar with water in a small saucepan. Heat over medium heat, stirring constantly, until the palm sugar is completely dissolved. Remove from heat and let it cool.
To serve, place a handful of the cooked pandan jelly (Cendol) into serving bowls. Add some ice cubes on top.
Pour the coconut milk over the Cendol, followed by the palm sugar syrup according to your sweetness preference.
Stir the Cendol before eating to mix all the flavors together.
