Bubur Bali – Balinese Spinach Risotto
Bubur Bali is a delightful Balinese dish that combines the creamy texture of risotto with the fresh flavors of spinach and coconut milk. Here's a recipe to make Balinese Spinach Risotto:
Ingredients:
- 1 cup arborio rice (or any short-grain rice suitable for risotto)
- 4 cups chicken or vegetable broth
- 1 cup coconut milk
- 200g spinach, washed and chopped
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fried shallots for garnish (optional)
- Lime wedges for serving
Instructions:
In a saucepan, heat the chicken or vegetable broth over medium heat until it simmers. Reduce the heat to low to keep it warm.
In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is soft and translucent.
Stir in the ground turmeric and ground coriander. Cook for another minute to toast the spices and release their flavors.
Add the arborio rice to the skillet. Stir to coat the rice with the onion and spice mixture.
Begin adding the warm broth to the rice, one ladleful at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process until the rice is cooked al dente, which typically takes about 20-25 minutes.
While the rice is cooking, blanch the chopped spinach in boiling water for about 1-2 minutes, then immediately transfer it to a bowl of ice water to stop the cooking process. Drain the spinach well and set aside.
Once the rice is cooked, stir in the coconut milk and blanched spinach. Cook for an additional 2-3 minutes, stirring gently until the spinach is heated through and the risotto is creamy.
Season the Balinese Spinach Risotto with salt and pepper to taste.
