Bé Balung – Pork and jackfruit soup recipe
Bé Balung is a traditional Indonesian dish, particularly popular in the Manado cuisine of North Sulawesi. It's a flavorful soup made with pork ribs and jackfruit, infused with aromatic spices. Here's a recipe to make Bé Balung:
Ingredients:
- 500g pork ribs, cut into bite-sized pieces
- 200g young jackfruit, thinly sliced
- 4 cups water
- 2 tomatoes, diced
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chili peppers, sliced (adjust according to your spice preference)
- 2 lemongrass stalks, white parts only, bruised
- 4 kaffir lime leaves, torn
- 1 tablespoon tamarind paste dissolved in 1/4 cup warm water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fried shallots for garnish (optional)
- Chopped green onions for garnish (optional)
Instructions:
In a large pot, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chili peppers. Sauté until the shallots are translucent and fragrant.
Add the pork ribs to the pot and cook until they are browned on all sides.
Pour in the water and add the lemongrass stalks, kaffir lime leaves, and diced tomatoes. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the pork is tender.
Once the pork is tender, add the thinly sliced jackfruit to the pot and continue to simmer for another 15-20 minutes, or until the jackfruit is soft.
Stir in the tamarind paste mixture to add a tangy flavor to the soup. Season with salt and pepper to taste.
Remove the pot from the heat and discard the lemongrass stalks and kaffir lime leaves.
Serve the Bé Balung hot, garnished with fried shallots and chopped green onions if desired. Enjoy the comforting and aromatic flavors of this Indonesian pork and jackfruit soup!
Note: You can adjust the spiciness of the soup by adding more or fewer chili peppers according to your preference. Additionally, you can add other vegetables such as corn or green beans for variation.
