Balinese Lawar Kuwir
Lawar Kuwir is a traditional Balinese dish made from young jackfruit. Here's a recipe for Lawar Kuwir:
Ingredients:
- 500g young jackfruit, thinly sliced or grated
- 100g grated coconut, toasted
- 2 kaffir lime leaves, finely sliced
- 2 stalks lemongrass, white part only, finely sliced
- 3 red chili peppers, finely chopped
- 5 shallots, finely chopped
- 3 cloves garlic, finely chopped
- 2 thumbsized pieces of galangal, finely chopped
- 2 thumbsized pieces of ginger, finely chopped
- 2 teaspoons shrimp paste (terasi), toasted
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon palm sugar or brown sugar
- Salt to taste
- Oil for sautéing
Instructions:
If you're using fresh young jackfruit, remove the skin and inner seeds, then thinly slice the flesh. If you're using canned young jackfruit, drain and rinse it before using.
In a large pan, heat some oil over medium heat. Add the chopped shallots, garlic, chili peppers, lemongrass, galangal, and ginger. Sauté until fragrant, about 3-4 minutes.
Add the sliced jackfruit to the pan and continue to sauté for another 5-7 minutes, or until the jackfruit is tender.
While the jackfruit is cooking, prepare the spice paste. In a mortar and pestle or food processor, grind together the toasted shrimp paste, ground turmeric, ground coriander, and palm sugar until you have a smooth paste.
Add the spice paste to the pan with the cooked jackfruit. Mix well to combine, ensuring the jackfruit is evenly coated with the spice mixture.
Continue to cook the jackfruit and spice mixture for another 5 minutes, stirring occasionally.
Once the jackfruit is cooked and well flavored with the spices, remove it from the heat and let it cool slightly.
Once cooled, add the toasted grated coconut and sliced kaffir lime leaves to the jackfruit mixture. Mix well to combine.
Taste the Lawar Kuwir and adjust the seasoning with salt if necessary.
Serve the Lawar Kuwir at room temperature as a side dish or part of a Balinese meal.
