Babi Kecap


 

Babi Kecap, also known as Ayam Kecap or Ayam Kecap Manis when made with chicken, is an Indonesian dish featuring pork (or chicken) cooked in a sweet soy sauce-based gravy. Here's a simple recipe for making Babi Kecap:

Ingredients:

  • 500g pork belly or pork shoulder, thinly sliced
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon tamarind paste, dissolved in 2 tablespoons water (or use lime juice as a substitute)
  • 1 tablespoon palm sugar or brown sugar
  • 1 teaspoon ground white pepper
  • 2 tablespoons vegetable oil
  • 1 cup water or chicken broth
  • Salt, to taste
  • Spring onions, sliced (for garnish)
  • Fried shallots (for garnish, optional)

Instructions:

  1. Heat vegetable oil in a pan over medium heat. Add minced garlic and sliced onion, and sauté until fragrant and onions are translucent.
  2. Add thinly sliced pork to the pan and cook until it starts to brown.
  3. In a bowl, mix together sweet soy sauce, soy sauce, oyster sauce, tamarind water (or lime juice), palm sugar, ground white pepper, and water (or chicken broth).
  4. Pour the sauce mixture over the pork in the pan. Stir well to coat the pork with the sauce.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the pan and let it simmer gently for about 30-40 minutes, or until the pork is tender and the sauce has thickened.
  6. Taste and adjust the seasoning with salt if needed.
  7. Once the pork is tender and the sauce has thickened to your liking, remove the pan from heat.
  8. Serve the Babi Kecap hot, garnished with sliced spring onions and fried shallots if desired. It's traditionally served with steamed rice.
