Ayam Suwir Sambal Matah (hredded chicken with fresh sambal matah)

 


Ayam Suwir Sambal Matah is a delightful Indonesian dish featuring shredded chicken with fresh sambal matah, a spicy and aromatic Balinese condiment. Here's a recipe to make it:

Ingredients:

For the shredded chicken (Ayam Suwir):

  • 500g boneless, skinless chicken breasts or thighs
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • Water or chicken broth for boiling

For the sambal matah:

  • 4 shallots, thinly sliced
  • 2 red chili peppers, thinly sliced (adjust to taste)
  • 2 bird's eye chili peppers, thinly sliced (optional, for extra heat)
  • 2 kaffir lime leaves, finely chopped
  • 2 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon shrimp paste (optional)
  • Salt to taste

Instructions:

  1. Start by cooking the chicken. In a pot, add the chicken breasts or thighs and cover with water or chicken broth. Add minced garlic, minced shallot, ground coriander, ground cumin, ground turmeric, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the chicken is fully cooked and tender.

  2. Once cooked, remove the chicken from the pot and let it cool slightly. Shred the chicken using two forks or your fingers and set aside.

  3. While the chicken is cooking, prepare the sambal matah. In a bowl, combine the thinly sliced shallots, red chili peppers, bird's eye chili peppers (if using), and finely chopped kaffir lime leaves.

  4. In a small skillet, heat the vegetable oil over medium heat. Add the shrimp paste (if using) and cook for about 1 minute, stirring constantly. Add the hot oil with shrimp paste to the bowl of sliced shallots and chili peppers.

  5. Add lime juice and salt to the sambal matah mixture. Toss well to combine and let it sit for a few minutes to allow the flavors to meld together.

  6. To serve, arrange the shredded chicken on a serving plate and top with the prepared sambal matah.

  7. Serve Ayam Suwir Sambal Matah immediately with steamed rice or as part of a larger Indonesian meal.
